Korean Street Toast With Ham and Cheese

I have been getting cabbages in my produce box lately, and while I do like cabbage in other applications (like crispy tasty fried kaki-age), here is a really simply way to use up cabbage. The winter cabbage is naturally sweet and crispy, perfect for breakfast every day!

Korean street toast is a popular snack in Korea, consisting basically of a vegetable omelette, sugar (yes, sugar!), ketchup, butter, and bread. I always take it a step further so here I added ham and cheese, Kewpie mayo, on home made Hokkaido milk bread/shokupan. You can use regular white bread but I have been baking milk bread a lot lately (made easier with my bread machine) so that’s what I’ve been using. If you’re uncertain about the sugar, a lot of asian countries enjoy sweetened egg omelettes (like tamagoyaki) but it’s optional.

Of course, I have been experimenting (as I tend to do) with the types of sauces and can, in my humble opinion, say that barbecue sauce, mustard, hot sauce (like Sriracha), or tonkatsu sauce also works wonderfully.

Ingredients

  • 2 slices Hokkaido Milk Bread or White Bread
  • 1 egg
  • 1/2 cup shredded cabbage
  • 1/4 cup shredded onion
  • 1/8 cup shredded carrot (optional)
  • 1 tablespoon butter, plus more, if toasting bread in pan
  • 1 slice cheese
  • 2-3 slices ham
  • 1 teaspoon white granulated sugar (optional)
  • Ketchup, BBQ Sauce, Hot Sauce, Mustard or Tonktasu Sauce
  • Kewpie Mayonnaise (optional)
  • Salt and pepper to taste
  1. You can choose to either toast your bread in the pan or in a toaster oven until slightly golden. If you do so in the pan, melt butter in the pan before toasting both slices of bread in the pan. Set to the side for assembly later (unless you have a teppanyaki skillet where you can do everything at the same time.
  2. Mix shredded cabbage with egg, salt and pepper to taste.
  3. In a pan over medium high heat, melt butter and shape the egg and cabbage mixture into the approximate shape of the toast.
  4. Allow to cook until omelette is golden on one side, flip over, lay on cheese and ham and cook until bottom side is done.
  5. Slather mayo on one slice of toast, lay filling on toast, sprinkle sugar over the egg and squeeze sauce of choice over the whole thing. Assemble other slice of bread on top and enjoy!
